What is Pommes Fondant and how to make it perfectly?

So Ben made the Pomme Fondant in a recent episode of Hell’s Kitchen and it was a disaster. Before dissecting his recipe, let us first define what a Pommes Fondant actually is. Simply put; Pommes Fondant is a combination of mashed potatoes, salt, pepper, butter, parsley, cream, bread crumbs and milk. This simple recipe traces its origin from France.
Now coming back to Ben’s recipe, he miscalculated the amount of salt and butter. While he didn’t meet the expectations of Gordon Ramsey, we have come up with a simple and ideal recipe for Pommes Fondant. Here it is
Recipe 1
- Ingredients
Baking potatoes: 6-8 large size
Unsalted butter: 1/2 lb
Parsley: One packet
Salt: 1 tea spoon
Pepper: 1 tsp
Cream: 1/2 cup
Milk: 1/2 cup
Bread crumbs: 3/4 cup
- Recipe
Cut the potatoes into medium-sized sections and boil them. Once boiled, mash them up and mix salt, pepper, butter, milk and parcley. You have to mix them thoroughly for two to three minutes. The next stage involves baking. Butter up a baking dish and spread the mixture evenly. Pour cream over the mixture and also pieces of bread crumbs. Bake at 220 C or 430 F for five minutes or until the bread crumbs are golden brown.

There is another way of making Pommes Fondant. It also uses less ingredients.
- Ingredients
Baking potatoes: 7-8 large
Unsalted butter: 1/2 lb
Stock: You can use stock of beef or mutton
Parcley: one pack
- Recipe
Cut the potatoes into three to four long pieces. Put these potatoes in a baking tray and pour stock till half fill. Buttuer up the potatoes and bake at 430F for five to seven minutes or when the potatoes are turned golden brown and stock is reduced. Season with parcley and proudly present to your guests.
